Ingredients
For the dough:
- 6 cups AP flour or one-to-one gluten-free flour
- 3 cups warm water (105-110° F)
- 2 tbsp sugar (or sub 1 tbsp of your favorite local honey!)
- 3 heaping Tbsp yeast
- 6 Tbsp olive oil (Olivelle Caramelized Garlic infused oil adds a flavorful twist!)
- 1 Tbsp salt
For the pizza:
- Shredded whole-fat mozzarella cheese
- Pepperoni (and/or other preferred toppings)
- Marinara or store-bought pizza sauce
Instructions
Prepare the dough:

In a bowl combine the water at about 110°F, sugar (or honey) and yeast. Stir gently and then let sit for 10 minutes until yeast blooms.

In a large bowl or stand mixer, mix the olive oil, salt, flour and yeast mixture slowly until just combined. If dough feels too sticky add more flour*, and if the dough feels too dry add more oil. *Remember that you will be adding more flour when rolling the dough out, so don’t add too much at this stage.
- Cover and let rise for 30 to 60- minutes*. We recommend using a reusable dough riser to cover the bowl (found at TCS!), but plastic wrap also works well. *If you plan to let this sit overnight, after 60 minutes, shape the dough into a ball, recover, and place in the fridge. The dough will last 2 days in the fridge.
Prepare the Pizza:

Preheat oven to 500 degrees F.

Divide the dough into 4 sections and sprinkle down a little flour and roll into a circle.

Shape the dough into a heart (we used a knife to cut the shape), then place on a baking sheet or pizza stone.

Brush with a little olive oil and poke some holes into the dough with a fork.

Add pizza sauce, cheese, and your preferred toppings.

Bake at 500 degrees for 10-12 minutes. Check it periodically to ensure the cheese doesn’t burn. (Note – if using a stone, cut cooking time to 8 minutes)
