Description
This is a fan-favorite dessert that combines peanut butter with marshmallows and a cookie crust.

Crust:
- 1 1/2 cups flour
- 2/3 cup packed brown sugar
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp baking soda
- 1/2 cup butter, softened
- 1 tsp vanilla extract
- 2 egg yolks
- 4 cups mini marshmallows
Topping:
- 2/3 cup corn syrup
- 1/4 cup butter
- 2 tsp vanilla extract
- 2 cups peanut butter chips (12 oz)
- 2 cups rice krispie cereal
- 2 cups salted peanuts
Instructions
- Heat oven to 350º. Line the bottom of a 13×9 pan with parchment paper. In a large bowl, combine all crust ingredients besides marshmallows until mixture forms a crumb texture. Evenly press into the bottom of the prepared pan with your fingers.
- Bake for 12-15 minutes, until crust is golden brown. Immediately sprinkle with the marshmallows and return to the oven for about two minutes, until the marshmallows slightly puff up. Let cool while working on the topping.
- In a large saucepan, heat corn syrup, butter, vanilla, and peanut butter chips until the chips are melted and the mixture is smooth, stirring constantly. Remove from heat and stir in cereal and peanuts. Spoon the topping over the marshmallows and spread out to cover. Let cool and cut into bars.
