Black Bean Ice Cream Sundae

We recently shared that The Carrot Seed’s founder, Kirsten, loves beans and ice cream. Now we have the perfect recipe for you to try them together! The bean mixture is smooth with chocolate chunks and the lettuce adds a delightful crunch. Don’t forget the whipped cream! You can easily sub sour cream if you don’t have whipped cream available. Please make sure to check the note at the very bottom of this post before you get cooking.

Black Bean Ice Cream Sundae

Sweet and savory, warm and cold. Fantastic combos for any occasion!


Ingredients

  • Vanilla Ice cream
  • Refried black beans with chiles
  • Mini chocolate chips
  • Whipped cream
  • Shredded lettuce

Instructions

In a small bowl, mix together 1/2 cup of refried black beans with 2 tbsp of chocolate chips. Place two scoops of vanilla ice cream in a separate small serving bowl. Top with a large spoonful of beans, a dollop of whipped cream, and shredded lettuce.
