Ingredients

  • 1 Baguette (come grab one from local baker Cottleston on Fridays at The Carrot Seed!), sliced into ¼” thick pieces
  • ⅓ cup Olivelle Basil Genovese Infused Olive Oil
  • 46 Ripe Tomatoes, diced
  • 5 Fresh Basil Leaves, chiffonade cut
  • 2 Garlic Cloves, minced
  • ¼ cup Olivelle Basil Genovese Infused Olive Oil
  • ½ tsp Olivelle Roasted Garlic Infused Sea Salt
  • Fresh Ground Pepper, to taste

Instructions

  1. Preheat oven to 400˚F.
  2. Line a baking sheet with bread slices, drizzle with Basil Genovese Olive Oil, and bake until toasted, about 10 minutes.
  3. In a non-reactive bowl (glass or ceramic), combine tomatoes, fresh basil, garlic, Basil Genovese Olive Oil, and vinegar. Add salt & pepper to taste.
  4. Spoon tomato mixture on individual toasts, distributing evenly. Enjoy!
